Pine Syrup?
Is this the new cool thing, or are we late to the party?
It's been on our minds lately. Maybe it's because we live in a pine forest, or are we seeing it more used in cocktails? The idea of a holiday cocktail (sparkling water or a nice gin) with subtle notes of pine intrigues us, the visual too, which led to a late night googling of a simple recipe.
Here is our experiment this weekend. Also wondering (if we love it), might this become a signature drink for Laurentian House?
Pine Syrup (for Cocktails):
Ingredients:
1/2 cup water
1/2 cup sugar
1/4 - 1/2 cup pine needles, chopped
Directions:
1. Dissolve sugar in water and bring to a boil. Remove from heat and put in pine needles to steep for 2-12 hours. Longer steep time will impart more flavour to the syrup.
2. When cool, strain the pine syrup.
3. Store in the fridge for up to a month.
Note: You can also freeze the syrup in an ice cube tray and have on hand when you're ready for a cocktail.
